Preheat the oven to 200 degrees Celsius
Line the baking tray with a silicone paper or parchment. Beat the egg whites. Use a forktill until they become foamy
Use a food processor to process the almonds until very fine. This should take about fifteen minutes
Add ¼ of egg whites and process for ten seconds o Add half of the sugar and process for ten seconds
Add another ¼ of egg whites and the remaining sugar. Process for another ten seconds
Add a further ¼ of the egg white and process further
Make sure that the mixture is soft however you must be able to shape it into twelve balls that are the size of walnuts. In case you see that the mixture to be too rigid put in the remaining egg white.
Put the balls on the baking sheet. Put them two inches apart. Brush all over with cold water
Add ½ drop of almond on each. Bake for fifteen to sixteen minutes until they are lightly brown.
